Mesclun salad with balsamic vinaigrette (followed by sorbet intermezzo)

Roasted tenderloin of beef with horseradish & watercress sauces
Cold poached salmon with sauce vierge and chive crème fraiche

Accompaniments
Basmati and wild rice salad with pine nuts, dried cranberries, ginger, spinach and rice vinegar
